To dismantle a Workshop, you have to tap on it and then tap the red button (notice that you can’t dismantle a Workshop if there is a car on it).The removed Workshop is put in the Build Panel. You can place it in your Performance Shop for free (and at the same level you dismantled it), by dragging and dropping it from the Build Panel to your Performance Shop.
