Yes, on the mobile app. Go to Settings > General Settings > Playback Options > uncheck the Continuous Playback.
When continuous playback is disabled, playback stops when you reach the end of the selected show. However, if you tap the skip button, it is assumed that you want to play the next episode in the list so Stitcher still play the next item in queue.
